Strawberry and Watercress Salad with Creamy Poppyseed Dressing

Farm fresh strawberries take center stage all summer long, especially in this straightforward salad. This salad is all about balance; sweetness, acidity, sharpness and peppery notes all play well together especially when paired with Chardonnay. Dressing can be made up to twenty four hours in advance.
Ingredients
- 12 ripe strawberries, quartered
- 1 red spring onion (or 1//2 red onion), thinly sliced
- 2 packs/bunches watercress (4 to 6 ounces)
- 1 shallot, minced
- 1 lemon, juiced
- ½ teaspoon salt
- 2 teaspoons sugar
- 2 Tablespoons poppyseeds
- ½ cup plain yogurt
- ¼ cup buttermilk
Preparation
- Place the minced shallot in a small mixing bowl with the lemon juice, salt and sugar. Stir together and allow to marinate for 5-10 minutes. This is a good time to wash the watercress and prepare the remaining salad ingredients.
- Whisk the remaining dressing ingredients into the lemon and shallot mixture and well combined. Taste and adjust seasoning if needed. Set aside/refrigerate.
- Toss together the watercress, cut strawberries and thinly sliced red onion in a large serving bowl. To serve, drizzle the dressing liberally over the assembled salad.
